Taste and Texture: A Butcher's Guide

Join me on Sunday the 9th of March at 2:30 for live butchering demonstration and deep dive into the relationship between anatomy and texture.
If you have ever wanted to know how to cook a piece of meat just by looking at it then this is the class for you. I will start by breaking down half a hog into its major muscle groups. I will follow that up with a tour of an entire beef chuck.
Recipes are easy to follow, but if you really want to master cooking meat and unlock your creativity that comes with Experience and Connection and this class will give you both. In addition to the demo we will be sampling cuts of every variety, and connecting their textures back to the animals anatomy.
After the demo there will be Classic First City Meats Taco Party, and every full share ticket will come with a bag of cuts both Beef and Pork with a retail value over $200. (exact cuts and amounts will be announced soon)
Tickets are $250 each and Companion Tickets are available for $35 each.
